Almogrote
(rich cheese spread from La Gomera)Ingredients: 150 grams of strong hard cheese
5 cloves of garlic
1 small cayenne pepper
4 ripe tomatoes
4 spoons of virgin olive oil
1 teaspoon of coarse salt
A small glass of stock
Preparation:
Crush the garlic in a mortar together with the salt and cayenne pepper until an even mixture is achieved. Grill the tomatoes to remove the peel and seeds, then cut them up and add them to the mixture. Blend to create a fine paste and then add the stock and the cheese. Pass the mixture through the blender once again until the ingredients are well mixed. Immediately after, gradually add the oil until the paste takes on a uniform consistency.
